Vegan Breakfast Empanadas

Hey veg friends, I'm back with another banger! No surprise there.

Vegan Bacon, Egg, Potato and Cheese Empanadas. No cruelty, no cholesterol, but ALL the flavor.


We're using some awesome vegan substitutes for this recipe including JUST Egg, Sweet Earth's Benevolent Bacon, and Daiya's Cheddar Shreds.


All of these ingredients can be exchanged for healthier versions like a tofu scramble, carrot/tempeh bacon and homemade vegan cheese... but to spare time and make this recipe a little more practical we'll be using these delicious vegan products!



If you haven't tried JUST Egg, seriously what are you waiting for? It's so delicious and a great substitute for scrambles, omelets, quiches and baked goods.


Sweet Earth's Bacon is my go-to in the vegan bacon world. It's awesome for BLT's, Potato Salad and today's Empanadas!


Diaya vegan cheese isn't something that I was always a fan of. When I first went vegan (almost 5 years ago) I did not like Daiya cheese at all. However, they've since changed their recipe- it even says so on the bag! And it is much more enjoyable. It's actually one of my favorite vegan cheese brands, and it can be found almost anywhere.


For the empanada dough, I like to use ready-to-bake pie crust. Be careful when shopping for pie crust because many brands use lard rather than plant-based oils and this won't be listed in the allergens- only the ingredients. I use a brand called 'Hill Country Fare' Pie Crust.


Now that we've covered all those bases... let's make some empanadas.
