Tempeh Sloppy Joes

Hola! Chef Jamie here, back with a delicious #PlantBased alternative to a cholesterol classic! Sloppy Joe's are on the menu and we're here to make them healthy! With limited, quarantine ingredients... this should be fun.


Get your non-stick skillets and steamer baskets ready! We are putting them to good use today.


This recipe makes 4 servings


Ingredients for Sloppy Joe: 8oz Tempeh 1 carrot - diced 2 celery stalks - diced 3 chipotle peppers 1 tsp smoked paprika 2 tsp turmeric 1 tsp cumin 1 tsp coriander 1/2 tsp red pepper flakes 4 tbsp agave nectar (or maple syrup) 2 tbsp celery salt (or regular salt)

4 Buns Ingredients for the Slaw: 1/4 head of cabbage - sliced 2 tbsp vegan mayo 1/2 tbsp dijon mayo 1/2 tbsp agave nectar or maple syrup

To prepare:

Start by dicing your tempeh up into small cubes, and steaming it for 5 minutes, using a double boiler. After it has steamed, let it cool.


Meanwhile, begin to brown the diced carrots and celery in your non-stick pan over medium-high heat, using 1 tbsp of oil *optional*. Once the vegetables are browned (2-5 minutes) begin to crumble, using your fingers, and add in the tempeh.


If needed add more oil to the pan, and stir every 30 seconds- start developing brown on the tempeh. Add in chipotle peppers, celery salt, smoked paprika, turmeric, cumin, coriander and red pepper flakes. Cook for 4 minutes.


Add in 1/2 cup of water, allowing the water to reduce and cook into the tempeh. Add additional 1/4 cups of water as needed to help make the 'sauce' for your sloppy joes. You can also substitute diced tomatoes, or tomato sauce for water- I was just running low on ingredients when I developed this recipe because, #StayAtHome #CoVid19 #Quarantine


Lastly, add in the agave nectar or maple syrup and let cook for 2 minutes, stirring constantly. Turn the heat off and let pan sit on hot burner while your prepare the coleslaw.


For the coleslaw...

Slice your cabbage or Brussels into thin strips, and add to the bowl your vegan mayo, dijon mustard and maple syrup. Mix well and add salt as needed.


To assemble...

Toast your hamburger buns, top with coleslaw, and top coleslaw with tempeh sloppy joe mixture. Add whatever toppings you like, pickles/tomatoes/onions, and enjoy!
