Popcorn is one of my favorite snacks. It's a whole grain and doesn't need much to make it delicious. But today we're doing the most, and guess what? It's going to be the best candied popcorn you've ever had!
I love this recipe because it's a rendition of a candied jello popcorn my mom used to make for Relay for Life as a way to raise donation funds.
Relay For Life is fundraiser for the American Cancer Society. It a 24 hour event where teams of people camp overnight taking turns walking or running around a track, at all times one participant from each team is expected to be on the track. The motivation behind this is that cancer and people battling it never get a break from the fight. The events are usually hosted at high schools, and local community parks.
Of course this is a gelatin-free recipe that uses organic sugar and earth balance vegan butter in place of traditional ingredients. Without further ado:
Raspberry Candied Popcorn
Makes: 10 cups popcorn
10 cups popped popcorn
1 cup Earth Balance vegan butter
2 cups organic sugar
1/2 cup organic light corn syrup
2 boxes Simply Delish jel dessert, raspberry flavor
Directions:
Preheat the oven to 200F. Prepare a sheet tray with parchment paper and cooking spray.
Once popcorn is popped, move it to a large mixing bowl or container. It's best to have all the popcorn in one large container when adding the raspberry caramel.
In a medium sauce pan add the vegan butter, sugar, and corn syrup. Allow to melt over medium heat then add in the hot syrup. Stir occasionally, allowing the mixture to come to a low boil for 4/5 minutes.
Quickly pour syrup over the popcorn and stir using a silicone spatula. Be careful as the syrup is extremely hot. Move the popcorn to the prepared sheet trays and bake for 45 minutes. Stir every 15 minutes. Let cool completely then keep in an airtight container.
