Decadent, Fudgy Black Bean Brownies

Hey Friends!


Today I am here to help you get a serving of beans in! Did you know, it's recommended to eat 3 servings of beans a day... that's 1 and 1/2 cups of beans you should be eating every day!


Not all of us are bean connoisseurs like myself... I LOVE BEANS, and I have found numerous things to do with them outside of eating them as they deliciously are. So that's why I am here to share with you a recipe that will definitely make getting servings of beans in a lot easier than usual.


Before we get started- in this recipe I suggest using canned black beans. However, if you have the time I always recommend using dried beans that you have rehydrated and cooked yourself. Fudgy Black Bean Brownies - No Oil!

Makes: 8x8 pan of brownies


Ingredients:

1 can black beans - drained and rinsed (1 1/2 cups)

2 tbsp cocoa powder

1/2 cup whole rolled oats

1/4 tsp salt

1/2 cup maple or agave syrup

2 tbsp creamy peanut butter

2 tbsp applesauce

2 tsp vanilla extract

1/2 tsp baking powder

1/2 cup dark chocolate chips (I like Enjoy Life brand)

+ 1/4 cup chocolate chips for top of brownies


Directions:

Preheat oven to 350F

Prepare small baking pan by lining the bottom with parchment paper or spraying with cooking oil.

Combine all ingredients (aside from the 1/4 cup of chocolate chips meant for the top of the brownies) in food processor or blender and blend until completely smooth. Leave no chunks of beans or oats in the mixture.

Spread into prepared baking pan, slamming the pan on the counter to even out the surface. Sprinkle extra chocolate chips over the top and bake for 16-20 minutes.


The brownies will be fudgy when done cooking. Let cool completely before cutting. Refrigerate and the brownies will form up a little bit! Good for 5 days if refrigerated.
