I've got a super delicious & super easy recipe for you today that will take you all of 5 minutes to throw together. Where do they do that at... No where... Except for here! You're welcome.

Chickpea Avocado Sandwich
recipe makes 4 sandwiches
Ingredients:
1 (15.5oz) can cooked chickpeas
1 avocado - halved, seeded and diced
1/2 yellow onion - diced
1 clove garlic - minced
6 springs cilantro - minced
1/2 lime - juiced
1/2 tsp salt
1/4 tsp pepper
8 slices of bread
Directions:
Drain and rinse the canned chickpeas, place them in a medium-sized mixing bowl. Using a potato masher- or fork, begin to mash the chickpeas. Leaving some of the chickpeas whole still- for a nice textural difference.
Once chickpeas are mashed add in avocado and mix well- allowing the avocado to mash together with the already mashed chickpeas.
Add in the diced onion, minced garlic, cilantro, lime juice, salt & pepper. Mix well.
Toast bread, then top with chickpea avocado mixture. Add any additional garnishes like lettuce, tomato, etc. whatever makes your heart happy.
